🍇 What Is Ice Wine?

Ice wine (or Eiswein, as it’s known in Germany and Austria) is made from grapes that have been naturally frozen on the vine. These grapes are harvested during the early morning hours of winter, when temperatures drop to around -7°C (19°F) or lower.

As the grapes freeze, the water content solidifies but the sugars and flavors remain concentrated. When pressed while still frozen, the result is a small yield of intensely sweet, flavorful juice — the basis of what becomes ice wine.
